Margherita includes cheese and basil
A classic margherita brings together tomato sauce, mozzarella, basil and olive oil. The cheese adds milky richness, while tomato supplies the fruity element. Evenly distributed small pieces of cheese leave room for the sauce and dough to contribute as well.
Fresh mozzarella contains moisture. Drain it as appropriate for the recipe and avoid overloading a thin base. The point at which cheese and basil are added depends on the baking method and duration. Several minutes in a domestic oven treat toppings differently from a very short bake at high heat.
Marinara leaves out the cheese
The typical marinara topping consists of tomato, garlic, oregano and olive oil. Despite the name, seafood is not part of this classic combination. Without cheese, tomato and garlic stand out more clearly; that does not require an extra-thick coating of sauce.
Distribute finely cut garlic evenly. Large raw pieces or individual dark, burnt slices can change the overall flavour considerably. Follow a suitable marinara recipe for quantity, cutting and baking rather than assuming that any pizza becomes the same dish simply by removing its cheese.
Choose according to the flavours you want
Choose margherita when you want a milky, softer component among the toppings. Marinara is a natural choice for a cheese-free combination with garlic and herbs. Classic dough made from flour, water, salt and yeast with those marinara toppings can be prepared as a vegan pizza.
When ordering, the restaurant’s actual ingredients matter. Ask specifically about dough, toppings and preparation if you have an intolerance. For a vegetarian margherita, choose a suitable cheese too. The dish’s name alone does not replace that concrete information.
Make a useful comparison at home
To compare them, shape two equally weighted dough balls from the same batch to the same diameter. Use the same tomato base and top one as margherita and the other as marinara. This makes it easier to notice the difference between cheese and the garlic-and-oregano combination.
Bake each using a method appropriate to its toppings and check that the base is cooked. Then judge the flavour and texture. A pizza with few ingredients does not need a longer topping list to be complete; distributing those ingredients appropriately makes the difference.
