Separate dough oil from pan oil
Oil kneaded into dough spreads through the mixture and affects its structure. Oil beneath a pan pizza acts directly where the dough meets the hot pan. A lightly oiled proofing container has a different purpose again: easier removal. Recipes specify these amounts at different stages; do not turn them into one unclear oil addition.
A more tender bite does not automatically mean a soft underside. Pan pizza can be soft inside and crisp underneath. Thickness, toppings, water content and heat transfer also shape the result. If the underside stays pale, check the baking surface, preheating and dough thickness before trying to solve the problem solely with more oil.
Calculate percentages from flour weight
In baker’s percentages, the total flour weight is one hundred percent. With 500 grams of flour, two percent oil means ten grams; three percent means fifteen grams. These are calculation examples, not prescribed quantities for every pizza. Weigh the oil directly instead of comparing tablespoons of different sizes.
Water and oil remain separate ingredients. A dough containing 500 grams of flour and 325 grams of water has 65 percent water hydration. Adding ten grams of oil leaves that figure at 65 percent; the dough also contains two percent oil. Do not replace water gram for gram with oil if you want the flour to receive the same amount of water.
Keep to the chosen recipe’s sequence
Some recipes incorporate oil from the start, while others add it after the dough has begun to form. Follow your recipe’s sequence and work a later addition in completely before judging consistency. A temporarily smooth, slippery surface is not a reason to pour in extra flour immediately.
For a very hot pizza oven, choose a dough formula designed for that use; a generously oiled pan dough cannot be transferred simply by shortening the bake. For your own comparison in a conventional oven, keep flour, water, fermentation and the weight of each dough portion unchanged. Vary only the oil amount within a suitable recipe and compare flavour, bite and browning. This makes it easier to identify which change contributed to the result.
