Use a flexible scraper in a bowl

A flexible scraper with a rounded edge follows the curve of a mixing bowl. Run it along the wall and underneath the dough rather than pulling the dough out a little at a time with your fingers. Less mixture is left behind. The scraper should flex to fit without folding over completely whenever it meets resistance.

It also helps bring an uneven mixture together. However, it does not automatically replace the kneading or folding required by the recipe. Use it inside a mixer bowl only with the machine switched off and disconnected from its power supply. Never scrape a moving hook or running roller with a card.

Use a straight edge for portioning

A firmer scraper or straight-edged bench knife makes dividing dough on a board easier. Position the edge vertically and separate the portion with one deliberate press. Pulling a long strand apart instead can leave an irregular division and unnecessarily stretch the remaining dough.

Weigh portions when their size matters to the recipe. A scale printed on the tool measures length, not dough weight. Correct small weight differences before rounding. Continue with the intended recipe sequence and protect the divided pieces from drying out; using a scraper does not create a new proofing schedule.

Move sticky dough without adding excessive flour

To release dough from the work surface, slide a suitable scraper flat underneath and lift with control. A clean edge works better than one covered in thick dough residue. The tool can help move dough without continually kneading in more flour and changing the recipe.

First check that the edge and material suit the surface. A sharp-edged metal bench knife can damage delicate coatings or soft worktops. The rounded flexible scraper is often more suitable for a bowl. Neither tool replaces a pizza peel in a hot oven unless it has expressly been designed for that purpose.

Collect residue and look after the edge

Gather fresh dough remnants promptly from a clean surface. Do not mix them with dirt or dried crusts and then automatically knead them back into the dough. For the final clean-up, remove loose residue and clean the surface and tool in a way appropriate to their materials.

Follow care instructions for wooden and plastic handles too. Replace chipped, split or damaged edges so fragments cannot enter food. A well-fitting flexible scraper is often enough to begin with. A straight bench knife is a useful addition when you regularly portion larger batches on a suitable work surface.
